large bowl of ice water
salt & pepper to taste
Optional: Chopped Shallots, Fresh Squeezed Lemon Juice, Lemon Zest, Fresh Dill, Red Pepper Flakes
Almond Slivers and or Choppedd Fresh Dill for garnish
Preparation
Step 1
Bring a medium to large pot of salted water to boil. Add green beans, and boil, stirring occasionally, until crisp-tender, about 4 minutes.
Step 2
Remove beans from heat, strain, and add to the large bowl of ice water until cool, about 3 minutes. (Can leave in longer if you're doing other tasks.) Remove from water, and pat dry.
Step 3
Melt butter in a large skillet over medium heat. Add beans, season with salt and pepper, and stir until warm and evenly covered in butter, about 2 minutes.
If using shallots, saute in butter for one minute before adding beans.
If using Lemon Juice, add a small squeeze from a lemon wedge just before serving and stir. At this time you can also add the lemon zest and dill or a pinch of red pepper flakes. Stir again.
Step 4
Transfer to a serving bowl and garnish with fresh dill sprigs and sliced almonds, if desired.
